The other day at work i was deciding, what I should make for dinner and for some reason i thought French onion soup! I don't Necessary eat this very much once in a while i would order it but never had homemade. So i looked up a recipe to try, off the Internet. It was called Authentic real french onion soup. My boyfriend thought it was so good, especially since i can take a recipe and do it great the first time. I admit i was very critical on it, the onions needed to be cooked longer, and the soup needed to be thicker, and i also need individual bowls for the soup, but that's just me. Now i can work at it to improve it and he will still love it! Its just great having someone that i love to cook for and they appreciate and love anything i try and do, even if its an epic Failure, which in his eyes i have yet to do! I never cooked a lot at home, my parents are jealous i must say. Living alone i didn't cook for one a lot of the time, it was a lot of sandwich's or easy things, bachelorette food! So having him as my guinea pig is great. Thanks babe for loving me and my cooking! Your the best!!! Here's the Recipe:
Classic French Onion Soup
Ingredients -
1 large Onion, peeled and thinly sliced.
Olive Oil
1/4 teaspoon flour
2 cloves Garlic, minced
4 cups Beef Stock or Chicken Stock
Salt and Pepper
4 slices Toasted French Bread
1 1/2 cups grated Swiss Gruyere with a little grated Parmesan cheese
1 tsp of Dijon mustard
Preparation:
In a large saucepan, saute the onions in the olive oil on medium high heat until well browned, but not burned, about 30 minutes.
Add the flour about 10 minutes into the process to help with the carmelization. Add garlic and saute for 1 minute. Add the stock.
Cover partially and simmer until the flavors are well blended, about 30 minutes. Season to taste with salt and pepper. Mix Dijon mustard with the cheese and place on top the bread.
To serve you can either use individual oven-proof soup bowls or one large casserole dish. Ladle the soup into the bowls or casserole dish.
Cover with the toast and sprinkle with cheese. Put into the broiler for 10 minutes at 400 degrees F, or until the cheese bubbles and is slightly browned. Serve immediately.
*** I used Mozza Cheese and it was really good, I also just regular mustard. Ill let you know any changes i do, next time i do it!
